Manfaat Bekatul untuk Kesehatan Tubuh

Apa yang terlintas di benak kita ketika mendengar kata bekatul? Dedak, berbau tengik, limbah padi yang apek, makanan ternak, kotor. Sebagian besar masyarakat menyamakan bekatul dengan dedak. Padahal, bekatul dan dedak itu berbeda. Dedak adalah limbah penggilingan/penumbukkan padi yang pertama. Sementara bekatul adalah sisa penumbukkan/penggilingan padi kedua (kulit ari beras). Saat padi digiling, kulit padi yang biasa kita kenal dengan gabah akan terpisah dari bulirnya. Butiran nasi yang biasa kita makan disebut endosperma beras. Bekatul adalah lapisan yang melapisi endosperma. Bubuk bekatul ini umumnya berwarna cokelat muda dan memiliki rasa agak manis.



Huweleeeh, Subhanallah kaaaan? Makanan yang selama ini mungkin kita remehkan, apalagi pakan ternak! Apa lantas dengan mengkonsumsinya kita jadi turun derajat??? Pak Drajat aja nggak merasa gituh kok *loh?* Pantesss ternak yang kita makan sueger-sueger yak hehehe.

Sekarang, cara konsumsinya piye? geneh... kalau ada keluhan penyakit di atas bisa pagi dan sore (atau pagi, siang, sore) masing-masing 2 sdm dicampur air hangat atau teh juga bisa. Masalah rasa yang tidak biasa di lidah, bisa diakali misalnya campur susu non/low fat, madu, atau gula diyeeet.

Tapi kalau hanya untuk menjaga kesehatan, buat sarapan pagi ajah. Olga Lidya bilang *sok akrab* sejak sarapan itu, dia nggak cepat lapar. Baru jam makan siang benar-benar laper. Nah... bisa ngurangin potensi ngemil tuh.

Tapi dari mbah Google saya diberi tahu bisa diolah jadi kue atawa cookies juga. Asyik ya
Kandungan Bekatul Padi
Berikut adalah kandungan vitamin dalam bekatul padi dalam kadar, ppm (berat kering). Ppm (part per milion) sama dengan mg/kg. Daftar ini bersumber dari Barber dan Benedito de Barber, 1980.

Cukup banyak bukan kandungan bekatul ini? Namun bekatul juga mengandung bau yang kurang sedap, kondisi ini timbul ketika bahannya sudah rusak. Perlu diketahui bahwa bekatul mudah sekali rusak. Bau tengik akan menguap saat bekatul mengalami kerusakan. Lalu, adakah cara untuk  membuat bahan ini bisa tahan lama? Tentu ada! Berikut beberapa cara mengawetkan bekatul :
  • Sangrai – Menyangrai bekatul berarti menggorengnya tanpa minyak dengan terus diaduk kurang lebih selama sepuluh menit. Namun kita perlu hati-hati, lalai sedikit bekatul akan gosong atau warnanya jadi cokelat tua. Sebelum disangrai, jangan lupa pastikan bubuk bekatul sudah halus (disaring). Manfaat bekatul sangrai diantaranya, untuk campuran makanan kecil ataupun kue-kue kering (kue yang tidak perlu pengembangan).
  • Menggunakan Sistem High Temperature Short Time – Ini teknologi yang efektif untuk mengawetkan bekatul. Namun, jarang dipakai karena biayanya lebih tinggi.
  • Kukus – Caranya, bekatul di kukus selama tiga puluh menit kemudian barulah dikeringkan. Setelah bubuk bekatul benar-benar kering, baru didinginkan.
Bekatul ini banyak digunakan untuk berbagai pengobatan penyakit. Berikut ini diantaranya :

Masyarakat pedesaan jaman dulu menggunakan lesung untuk menumbuk padi, sehingga bekatulnya masih menempel di bulir beras. Nasi yang masih terdapat kandungan bekatul tersebut mereka konsumsi setiap hari. Jadi tidak heran kalau orang desa jaman dahulu tahan terhadap berbagai penyakit, dan staminanya tangguh. Bekatul pun banyak dipakai untuk makanan selingan (makanan tambahan) seperti pepes atau ditambah ke bubur.
Berikut ini cara konsumsi bekatul yang sehat :
1.    Obesitas (kegemukan) : sehari tiga kali, dua sendok makan penuh (munjung) gunakan gula rendah kalori.
2.    Makanan pendamping obat dokter. Bagi yang sedang dalam perawatan (pengobatan) boleh konsumsi bekatul dengan tetap makan obat dari dokter. Makanlah bekatul sehari dua kali sebanyak satu sendok makan (30 gram). Yaitu pagi satu sendok dan sore hari satu sendok.
3.    Stamina tubuh : sehari satu sendok makan (30 gram), seduh dengan segelas air panas.
Campuran Bekatul dalam Masakan :
  • Bekatul dapat ditambahkan dengan tepung terigu untuk meningkatkan kadar serat pangannya. Campuran ini sangat baik untuk pembuatan roti manis, roti kering, bolu kukus, kulit dadar gulung, dan makanan lain yang menggunakan terigu.
  • Bekatul dapat dicampurkan dalam tepung beras yang akan diolah menjadi beragam makanan lezat seperti kue cucur.
  • Bekatul pun bisa dicampurkan ke dalam sup, bubur kacang hijau, susu cokelat, santan kelapa.
Efek Samping Makan Bekatul
1.    Dapat menyebabkan diare saat pertama kali mengkonsumsinya.
2.    Terkadang susah buang air besar jika terlalu banyak memakannya (kasus yang jarang) karena itu perbanyak buah-buahan dan sayuran.
3.    Hati-hati bagi penderita maag, makan bekatul langsung banyak bisa menyebabkan mual. Makanlah bekatul encer atau ditambah dengan makanan lainnya (misal : agar-agar, sup, bubur). Jika konsumsinya benar, maag bisa mereda.
Namun seiiring perkembangan jaman, masyarakat desa sekarang tidak lagi memakai lesung untuk menumbuk padi. Sudah ada alat penggilingan padi yang lebih praktis, cepat, dan murah. Proses penggilingan tidak akan menyisakan bekatul di bulir padi.
Akhirnya, limbah dari penggilingan padi yang berupa dedak dan bekatul dijual hanya untuk makanan ternak saja. Karena itulah orang desa tidak lagi ada perbedaan dengan masyarakat kota yang rentan terhadap berbagai penyakit kronis seperti, sakit jantung, hipertensi, diabetes, hati, kolesterol. Bekatul adalah bahan pangan yang kaya gizi, maka konsumsilah dengan teratur.
